Roast Vegetables Ingredients (For Two):
1/2 carrot, cut on a bias
2 nugget potatoes, halved
2 Brussels sprouts, halved
Salt & Pepper (S & P), lemon, and extra virgin olive oil (EVOO)
Preparing the Chicken
Start by flattening the chicken slices between two pieces of plastic wrap. This step ensures they cook evenly, making the dish more tender. Season the chicken with salt and pepper on both sides for extra flavor.
